Method
- Preheat oven to 425°F. Prepare the pastry and fit it into a 9-inch pie plate.
- Sprinkle the cooked bacon, Gruyère cheese, and chopped onion evenly over the bottom of the pastry-lined pie plate.
- In a medium bowl, lightly beat the eggs. Add the half-and-half, salt, black pepper, and cayenne pepper; whisk until well combined.
- Pour the egg mixture evenly over the bacon, cheese, and onion.
- Bake, uncovered, for 15 minutes. Reduce the oven temperature to 300°F and continue baking for about 30 minutes, or until a knife inserted halfway between the center and edge comes out clean.
- Remove from the oven and let stand for 10 minutes before slicing and serving.

Make-Ahead Tip
The quiche can be partially prepared up to 24 hours in advance. Place the bacon, cheese, and onion in the prepared pastry shell; cover and refrigerate. In a separate bowl, whisk together the eggs, half-and-half, salt, black pepper, and cayenne; cover and refrigerate. When ready to bake, stir the egg mixture well and pour it into the prepared pastry shell.
