Method
- In a large bowl, combine the mascarpone, sugar, orange liqueur, and rum. Beat until smooth.
- In a chilled bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the mascarpone mixture until well combined.
- Lightly dip 12 ladyfingers in the cold espresso, being careful not to oversaturate them. Arrange in a single layer in the bottom of an 8-inch square baking dish.
- Spread half of the mascarpone mixture evenly over the ladyfingers, then sprinkle with half of the chopped chocolate.
- Repeat with the remaining ladyfingers, mascarpone mixture, and chopped chocolate.
- Cover and refrigerate for at least 1 hour, or preferably overnight, before serving.
