Method
- Preheat oven to 425°F.
- Remove fat from back of rack, and peel of any sinew from behind the bones. YouTube is a great resource for demonstrations on how this is done.
- Over high heat in a cast iron pan, sear the rack of lamb on all sides.
- Place bone side down on sheet pan.
- Brush top with mustard.
- Combine breadcrumbs, garlic, thyme, and rosemary, and press the mixture into the mustard on top of the racks.
- Cook in 425°F oven for 20 to 25 minutes until thermometer inserted into center registers 125°F for rare.
